Banana Bread

Ingredients
4 ripe bananas
1/4 cup (1/2 stick) melted unsalted butter
1 egg at room temperature
1 teaspoon vanilla extract
1 cup Greek or Icelandic plain yogurt
1/2 cup (100 g) sugar
1 1/2 cups (190 g) all-purpose flour
1 pinch of salt
1 teaspoon of baking soda
1 teaspoon ground cinnamon
Preparation
Preheat the oven to 350 ºF (175 ºC) and butter a loaf pan. If you want to make banana bread muffins line muffin tins with 18 liners.
In a large bowl, mash the 4 bananas and then whisk in 1/4 cup melted butter, 1 egg, 1 teaspoon vanilla, and 1/2 cup sugar.
In a medium bowl sift together 1 1/2 cups flour, pinch of salt, baking soda, and cinnamon.
Slowly mix flour mixture into banana mixture until no flour is visible. Then add in 1 cup of yogurt. Again mixing until no flour is visible but not longer.
Pour the batter into the buttered loaf pan and bake for 1 hour to an 1 hour and 15 minutes or until a tooth pick inserted in the middle of the loaf pan comes out with just a few moist crumbs. If you are making banana bread muffins bake for 20-30 minutes and check the same way for being done.
Let the banana bread cool in the pan completely before taking it out and slicing it.
