Black Bean Burger

Ingredients
1 shallot, diced
2 tablespoons olive oil
4 cloves of garlic, minced
1 large bell pepper, diced
1 seranno pepper, minced
1 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon sumac
1 1/2 teaspoons red chili powder
1 teaspoon red pepper flakes
2 cans of black beans, rinsed
2 ears of corn, cut off the cob
2 eggs
2 tablespoons
1/2 cup of bread crumbs
1/2 cup goat cheese
2 tablespoons ketchup
Salt to taste
Black pepper to taste
Preparation
Preheat the oven to 350 ºF (180 ºC). Line a baking sheet with aluminum foil and oil it generously.
In a medium pan over medium heat sauté 1 diced shallot in 2 tablespoons olive oil. Cook until the edges of the shallot pieces become translucent. Add 4 cloves of minced garlic, 1 diced bell pepper, 1 minced seranno pepper, 1 teaspoon cumin, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1/2 teaspoon sumac, 1 1/2 teaspoons red chili powder, and 1 teaspoon red pepper flakes. Sauté until the peppers starts to brown and the spices are fragrant. Remove from the heat and reserve.
Add 2 cans of rinsed black beans to a large bowl. Use a potato masher to lightly mash the beans. Add the pepper onion mixture, 2 ears of corn off the cob, 2 eggs, 1/2 cup of bread crumbs, 1/2 cup of goat cheese, 2 tablespoons ketchup, salt to taste, and black pepper to taste. Mix well to combine everything.
Divide the mixture into 10 equal lumps (about 1/3 cup per patty). Use your hands to form into a patty shape on the lined baking sheet.
Bake for about 10 minutes on each side (a total of 20 minutes). You want to make sure they are crispy and holding their shape but not overcooked and starting to dry. When they are ready, remove them from the oven and let them cool slightly before serving in a bun and with your favorite veggie burger toppings like cheese, pickles, ketchup, pepper jelly, tomato, and avocado.
Notes
Yield: 10 black bean burger patties.
