Butter Bean Dip

Ingredients
16 ounces (1 can) butter beans, rinsed and drained
3 tablespoons olive oil
Juice of two lemons
Zest of 1 lemon
1 tablespoon minced rosemary
1 teaspoon red pepper flakes
1/2 teaspoon freshly ground black pepper
1 clove of garlic
Preparation
In the bowl of a food processor add 16 ounces (1 can) butter beans, rinsed and drained, 3 tablespoons olive oil, the juice of two lemons, the zest of 1 lemon, 1 tablespoon minced rosemary, 1 teaspoon red pepper flakes, 1/2 teaspoon freshly ground black pepper, and 1 clove of garlic. Pulse everything together until it is smooth.
Pour the mixture into a serving bowl and serve with bread or crackers. I also recommend pairing it with roasted mushrooms.
Notes
Yield: ~ 1.5 cups of bean dip
