Cheesy Grits



Ingredients

  • 3 cups of water

  • 1/4 teaspoon better than bouillon

  • 1 cup of quick cook grits

  • 1/2 cup of milk

  • 2 cups of shredded cheddar or parmesan

  • Salt and pepper to taste


Preparation

  1. In a medium-large pot combine 3 1/2 cups of water with 1/4 teaspoon of better than bouillon. Bring it to a boil.

  2. Add the quick grits and reduce to a simmer. Whisk continuously until the grits thicken (about 5 minutes). Once thickened, add 1/2 cup of milk and 2 cups of shredded cheddar cheese. Season it with salt and pepper to taste.

  3. Serve with something like blackened tofu or fried cauliflower.


Notes

  • Yield: ~ 4 servings of grits
