Chocolate Zucchini Bread



Ingredients

  • 1 cup all-purpose flour

  • 1/2 cup of cocoa powder

  • 1 teaspoon baking soda

  • A pinch of salt

  • 2 eggs

  • 1/2 cup of granulated sugar

  • 1 stick (1/2 cup) melted butter

  • 1 tablespoon vanilla extract

  • 1 1/2 cups shredded and strained zucchini

  • 1 1/2 cups semi-sweet chocolate chips


Preparation

  1. Preheat the oven to 350 ºF (180 ºC). Butter a 9" x 5" loaf pan.

  2. In a medium bowl whisk together 1 cup all-purpose flour, 1/2 cup of cocoa powder, 1 teaspoon baking soda, and a pinch of salt.

  3. In the bowl of a stand mixer fitted with the paddle attachment, beat together 2 eggs and 1/2 cup of granulated sugar. Beat on medium speed until the eggs start to lighten in color (about 2 minutes). Add your stick of melted butter and 1 tablespoon vanilla extract and beat until well combined. Scrape down the bowl.

  4. Add the dry ingredient mixture into the stand mixer and beat on medium speed for about 2 minutes until everything is incorporated. Finally add in 1 1/2 cups shredded and strained zucchini and 1 cup of chocolate chips. Stir everything together in the stand mixer until it is incorporated. Scrape down the bowl to ensure that everything is mixed together.

  5. Pour the batter into the prepared loaf pan and top with the remaining 1/2 cup of chocolate chips.

  6. Bake until a toothpick inserted into the loaf comes out with moist crumbs (for 40 - 50 minutes). Remove from the oven and let cool before cutting into it. Store it in an airtight container.
