Cinnamon and Vanilla Rice Pudding



Ingredients

  • 1/2 cup of long grain white rice

  • 1 cup of cream

  • 1 can of coconut cream (about 13.5 ounces)

  • 1 tablespoon of sugar

  • 1 cinnamon stick

  • 2 teaspoons ground cinnamon

  • 1 tablespoon vanilla extract


Preparation

  1. In a medium pot stir together 1/2 cup white rice, 1 cup of cream, 1 can of coconut cream, 1 tablespoon of sugar, 1 cinnamon stick, and 1 teaspoon of ground cinnamon. Cook over medium heat stirring every few minutes to prevent it from sticking. Cook for about 30 minutes until it has thickened to the texture of custard and the rice is soft.

  2. Add 1 tablespoon of vanilla extract and cook for 2 more minutes. Then remove the pudding from the heat and let it cool slightly for 10 minutes.

  3. After 10 minutes, add the pudding to bowls and top with the remaining teaspoon of ground cinnamon. Enjoy it warm and fresh.


Notes

  • Yield: ~ 1.5 cups of rice pudding
