Horchata



Ingredients

  • 4 cups of water

  • 1 cup white rice (uncooked)

  • 2 cinnamon sticks

  • 1 teaspoon cinnamon, plus additional for topping

  • 1 cup milk (you can use oat milk or almond milk to make it vegan)

  • 1 teaspoon vanilla extract


Preparation

  1. In a larger pitcher stir together 4 cups of water, 1 cup white rice, and 2 cinnamon sticks. Place it in the refrigerator for at least 12 hours.

  2. After 12 hours, pour the contents of the pitcher (minus the 2 cinnamon sticks) into a blender. Add 1 cup of milk, 1 teaspoon of cinnamon, and 1 teaspoon of vanilla extract. Blend on high for 4 minutes.

  3. Strain the mixture through a fine mesh strainer into a clean bowl. Then strain it again through a cheese cloth into a serving pitcher. Keep it refrigerated until you are ready to serve it. Serve over ice and top with a sprinkle of cinnamon.


Notes

  • Yield: ~ 4 cups of horchata
