Mango Sticky Rice



Ingredients

  • 2 cups sticky rice

  • 2 1/4 cups water

  • 1 can coconut cream

  • 1/4 cup of sugar

  • 2 ripe mangos

  • 1 teaspoon sesame seeds


Preparation

  1. Wash your 2 cups of sticky rice and place in the bowl of a rice cooker. Add 2 1/4 cups of water and turn on your rice cooker to cook. Let the rice cook. Once the rice cooker turns off, fluff your rice and set aside.

  2. Meanwhile, in a small saucepan over medium heat, cook your can of coconut cream until it is all liquid. Then add 1/4 cup of sugar and cook over medium-low heat for 10 minutes. Remove from heat and reserve.

  3. Peel and pit your two mangos. Then slice them into long thin pieces.

  4. When you are ready to serve your sticky rice, divide your sticky rice between 4 different bowls. Then add, 1/4 of the coconut mixture and a 1/4 of the sliced mango to each bowl. Top with the sesame seeds and enjoy.

  • Yield: ~ 4 people
