Open Faced Egg Salad Sandwich



Ingredients

  • 1 hard boiled egg

  • 1 cornichon

  • 1 small tomato

  • 1/4 of a jalapeño

  • 1 teaspoon Dijon mustard

  • 1/2 teaspoon mayonnaise

  • Black pepper to taste

  • Pinch of salt

  • Two pieces of bread


Preparation

  1. Toast your two pieces of bread to your desired toast level.

  2. Chop the hard boiled egg, cornichon, 1/4 of a jalapeño, and small tomato into small pieces and add to a small bowl. Add 1 teaspoon Dijon mustard, 1/2 teaspoon mayonnaise, black pepper to taste, and pinch of salt to that bowl. Mix together well.

  3. Add to your toast and top with more pepper and enjoy.


Notes

  • Yield: 1 serving (two pieces)
