Open Faced Egg Salad Sandwich

Ingredients
1 hard boiled egg
1 cornichon
1 small tomato
1/4 of a jalapeño
1 teaspoon Dijon mustard
1/2 teaspoon mayonnaise
Black pepper to taste
Pinch of salt
Two pieces of bread
Preparation
Toast your two pieces of bread to your desired toast level.
Chop the hard boiled egg, cornichon, 1/4 of a jalapeño, and small tomato into small pieces and add to a small bowl. Add 1 teaspoon Dijon mustard, 1/2 teaspoon mayonnaise, black pepper to taste, and pinch of salt to that bowl. Mix together well.
Add to your toast and top with more pepper and enjoy.

Yield: 1 serving (two pieces)
