Roasted Leeks and Mushrooms with Eggs



Ingredients

  • 2 leeks, sliced and cleaned

  • 2 cups sliced shiitake mushrooms

  • 1 tablespoon red pepper flakes

  • 1/4 teaspoon salt

  • 1/4 teaspoon freshly ground black pepper

  • 2 tablespoons olive oil

  • 4 eggs, separated


Preparation

  1. Preheat your oven to 400 ºF (205 ºC). Line a baking sheet with aluminum foil.

  2. To the baking sheet add 2 sliced and cleaned leeks, 2 cups sliced shiitake mushrooms, 1 tablespoon red pepper flakes, 1/4 teaspoon salt, 1/4 teaspoon freshly ground black pepper, and 2 tablespoons olive oil. Use your hands to massage everything together.

  3. Bake until the mushrooms and leeks are golden and crispy (about 15 minutes). Then add your 4 egg whites onto the baking sheet and bake for an additional 5 minutes. Finally add the egg yolks to the baking sheet and bake for a final 2 minutes.

  4. Remove from the oven and serve immediately.

  • Servings: ~ 4 people
