Tarragon Dip with Artichoke



Ingredients

  • 1 Artichoke

  • 2 tablespoons mayo

  • 3 tablespoons white wine vinegar

  • 1 teaspoon of dried tarragon


Preparation

  1. Cut the top off the artichoke and trim all the leaves to they are no longer pointy. In a medium pot fitted with a steamer add 1 1/2 cups of water. Then add your artichoke to the steamer basket and put the lid on the pot. Cook over medium heat for about 25 minutes until you can easily pull a leaf off the artichoke and when you taste it the flesh of the artichoke is easy to pull off with your teeth. Then remove the artichoke from the heat and let come to room temperature.

  2. Meanwhile, in a small bowl whisk together 2 tablespoons of mayo, 3 tablespoons white wine vinegar, and 1 teaspoon of dried tarragon. Mix until well combined and then refrigerate until you are ready to serve.

  3. Add your artichoke to a serving dish and serve with the tarragon sauce.


Notes

  • Yield: 1 artichoke and 1/4 cup of dip
