Vanilla Bean Brown Butter Rice Krispy Treats



Ingredients

  • 1 stick (1/2 cup) unsalted butter

  • 1 vanilla bean, split and scraped

  • 10 ounces of vegan marshmallows

  • 5 cups Rice Krispies cereal


Preparation

  1. Butter an 8 by 8 inch square pan and set aside.

  2. Melt your stick of butter in a large pot over medium heat. Cook, stirring frequently until your butter starts to brown. You will know it is done when there are many small brown bits on the bottom of the pan and there is a nutty smell to your butter. Be careful that you don't over cook (you want brown pieces not black). Cut the heat and then add in the inside of your vanilla bean and 10 ounces of vegan marshmallows. Using the heat of the pan melt the marshmallows into the butter. Mix vigorously to combine. If it is not warm enough return to a low heat.

  3. Once the butter, vanilla, and marshmallows have been fully combined, add in the 5 cups of Rice Krispies. Stir until everything is combined.

  4. Pour the mixture into the prepared pan and spread into an even layer. Let cool for 30 minutes and then remove from the pan. Cut into your desired sizes and either serve or store in a airtight container at room temperature.


Notes

  • Yield: ~ 16 rice krispy treats

  • Trader Joes has a great vegan marshmallow that works very well in this recipe.

These are so quick and easy and wonderful for kids!! I made them for a soccer game.
